tl;dr He eats mostly raw fruits and veggies and gets his liquids from those. He had an "Addiction" to processed foods. Clearly he has issues with food and is compelled to share it with the world. It's about as obnoxious as you can imagine.
I didn't realize this was such a big deal. I've been vegan for years and will frequently go for long stretches without explicitly drinking water. The reason is that there is a ton of water in fruit and so don't get thirsty.
That said, it's not clear why drinking water wouldn't be healthier for me/author. Sure theres a lot of water in fruit and vegetables: so why think it bad to drink more, explicitly?
The idea that we need 8 glasses of water a day comes from water company marketing departments, not science. Same for nearly everything in the popular common knowledge about sports drinks and electrolytes for athletes and others exercising.
Unless you have some medical condition that throws off your normal body systems, you only need to drink when you feel thirsty. For some people that will happen several times a day, and for others it might happen only a handful of times or fewer depending on how much water they get from their food.
There was an excellent episode of "Adam Ruins Everything" a few weeks ago on this topic. It is well worth watching.
