Is there any phone that does not spy on me?

I am looking to buy a new phone but I am concerned about privacy.

Coming from a German Democratic Republic background, I know about surveillance and its effects on mindset and behavior, even if actions are implicit. I realize many people here have a different perspective, but that is mine.

So far, I have always been using Palm, followed by Blackberry. I figured that these small companies owning all my data would not really matter. I also do not care that much about governments knowing my every move (so, that's why I was okay with Blackberry).

Recently, major apps have stopped supporting Blackberry (Whatsapp, Evernote...). While I can emulate them, the performance is just bad. For Whatsapp, that's fine. For Evernote, it breaks usability. Furthermore, modern Javascript websites downright freeze the browser.

Now all phones seem to be running Android or IPhone. As far as I know, Google logs everything, from steps, favorite restaurants, words I type into their keyboard and so forth. And they want more and more. Every move by that company has been frightening to me. Apple logs everything as well, but I guess doesn't sell the data.

One option is to use LineageOS. But that seems very difficult to do for someone who is not well-versed in phone jailbreaking and the like. I am not a big app person, basically all I need is Whatsapp and Telegram messaging apps. The less of everything else, the better.

Is there any alternative out there?
