I’m still confused how the definition of a good tip changed from 15% to 20%.
As am I. When I learned about tipping, back in the 1980s, I was told it was 10-15%.

The article points out that "African-Americans are generally less familiar with the unwritten rule that a 15 percent tip" but following the tips doesn't resolve the origin of the rule.

I followed the link to learn "Whereas roughly 70 percent of whites identify the customary or expected restaurant tip to fall within 15-20 percent of the bill, only about 35 percent of blacks do. In addition, black respondents, on average, believe that the typical restaurant customer tips about 13.4 percent of the bill, while whites believe that the typical restaurant customer tips about 14.5 percent."

Because popular culture is created by former waiters. In movies and TV, the classic sign of a villain is that he is a bad tipper. Most screenweiters / directors / etc. got their start while waiting tables in Los Angeles.
„tipped minimum“ - just wow! As someone living in Asia the American tipping culture is ridiculous and highly unfair. This countr is broken on so many levels.
