iOS btle / wifi dev kit

Looking for some guidance on entry level btle / WiFi kit. I’m working on an electric aircraft project and need an MCU capable of managing 2-3 sensors. Ideally the hardware would be nearly off the shelf and easy to produce. It’s been years since I’ve wrote software so just something easy to prove concept across a few things. What’s out there?
