For the same reason non-tech people love coffee: it's a social drink with lots of caffeine.

It’s a relatively inexpensive legal stimulant. It’s not just tech people. It seems popular amongst all class of people most everywhere.

Since programming involves no other physical activity than some finger- and eyeball movements interspersed with periods of just thinking, my body tends to assume that I'm ready to sleep before long. Coffee mitigates that somewhat.
