Conversely there are a lot of books that count as popular science but don't actually carry a lot of clout in the field. I won't name names.

What are books that are well-respected in your discipline that aren't necessarily written for a lay audience?

I'll start. For those interested in good service UX, "Experience Design" by Newberry and Farnham is the best 'from first principles' experience you can get. It was used as a textbook during my UX training.
