I'm almost always on ##linux ##philosophy ##programming and #music on freenode :)
Why I like them? They are about topics that interest me, in #music people often link stuff I'd have no other way of discovering, and if I am getting into a groove, I can link to something and someone else will link something similar, which I may have not heard before.
Then there's the anonradio channel, but also "com" on the sdf, and the #tildetown channel on.. tilde.town :)
Those are mainly just to hang out and talk to people about whatever.
My experience is that IRC servers often have the deep level and niche experts I need to seek for assistance but IRC clients make me want to rip my hair out. I was using one on my phone until one day the IP my phone was using was banned from the server. Other times I’ll have these random connection errors and the only reference online are forum posts from 2005 that have nothing to do in common with my setup.
I haven't been on in years. I used to be on Freenode. I forget the exact names since some have similar names to others. Might have been #politics for the debates, #philosophy for debates and ideas, ##guns (got banned from #guns or vice versa) for knowledge, and then a programming or programming language channel to give or recieve help with whatever language I was working on.

I host my own ZNC IRC bouncer and as a client I use plain good old irssi on either windows (MSYS2) or Linux.
