How do you interview systems administrators?

During our hiring process we have a virtual linux environment that has some broken services (these are broken automatically by a script). The applicant logs into the server and attempts to resolve the service down issues. This is conducted live over a video conference and consumes a lot of valuable time when we have numerous applicants.

Any suggestions for a more automated or efficient way of testing/interviewing technical knowledge with out having "multiple choice" questions?
