Ask HN: Smartphone Friendly OS?

I have a bunch of old phones that I have slowly been introducing into my daily activities. One struggle area is most modern apps are just not available through the play store (or equivalent) for those old OS versions.

Is there a phone OS where I could potentially compile apps for and run it on my phone ? I do this for linux on my desktop and VMs. I have no clue where to start for phones.
