Commenting on the MS Paint IDE thread, I remembered how Tabula has helped me extract data on numerous occasions. I thought I should give the project a shout out for no good reason.
How does this compare to Adobe's extract-PDFs-to-MS-Office product? (Aside from this being FOSS for which you don't have to pay a subscription. Edit: Also, Adobe's offering might only run in the cloud - I don't remember.)

Running on my local machine or being able to deploy tabula as a service behind a vpc was a very nice thing. The recognition has been good enough. Sometimes I’ve had to scan things multiple times to deal with weird formatting, but in general, tabula has saved me many hours of work.
