Stevia is not sugar. It is a sweetener.

yeah I know, but stevia is calorie-free so until this new low GI sugar(that also needs to be cheap) takes over...
Does that work for baking and similar activities? Sugar sometimes provides structure to a recipe. I've never tried stevia as an ingredient, only an additive.
