Are there really good opportunities online for someone like me (a mid career individual looking to come back to data science) where i can volunteer my time and skills while working via Zoom ?

Not exactly volunteer, but you can participate in competitions like Kaggle or maybe data science related ones from DARPA (might be under the heading of another agency).
