There are many summary channels but I haven’t found any who show how their hacking process

Jonathan Blow and George Hotz get pretty technical at times.

But if you want something that's a bit funnier and goes into the process of tinkering and working on interesting problems, I like Code Bullet on YouTube.

Tsoding is a nice one. I think he's been working on his own programming language for a while now.
+1 for Tsoding. Very smart fellow. Unlike most streamers, he always mixes up programming languages instead of focusing on a specific one. I find that interesting, but I also understand some people wouldn’t.
Ryan Levick used to stream Rust videos when he had the time. They are excellent.
If you are a Java Developer I suggest Adam Bien and Sebastian Daschner. They both have YT channels and produce regular contents.
I recently started writing emacs like editor in Elixir and sharing process on Twitch almost every each day at 18:00 UTC.

Not sure whether it qualifies as a good programming stream though https://www.twitch.tv/achempion.

Some interesting picks (all on Twitch):

* Kitboga: mostly messes with tech support scammers, but sometimes works on helpful projects on stream

* strager: variety tech streamer. Mainly works on his project, quick-lint-js, but also spends a lot of time helping his viewers with their projects. Friendly and collaborative chat.

* museun: lesser known Rust dev, extremely talented

* kristoff_it: I believe he leads “marketing” (or something like that) for the Zig language. Obviously streams a lot of Zig :)

* teej_dv: one of the lead devs of Neovim, streams some work-related stuff too.

* rw_grim: one of the core devs of Pidgin, streams work on that.

* gamozo: hardcore, low-level development streams with a broad focus on fuzzing. This dude is a good example of a 10x developer ;)
