Boring answer: macOS on my work and personal laptops (though personal doesn't see much use these days), Windows for desktop (mostly internet browsing + gaming).
Currently Win11 for work vms. Win11 for host. I went full circle during 2021 on my host os tho. Started on win10 > Linux mint > garuda > Ubuntu > win 11.
I built a Hackintosh desktop a few years ago that has been my main development machine. About a year ago I got an M1 MacBook Pro that I've been very impressed with. I jump between the two pretty regularly.
After never being totally happy with Ubuntu or Pop!_OS and flip-flopping between them and Windows 10, I eventually decided to try Fedora. It has been great, and I have no interest in trying anything else.

I write quite a bit of C++ and Java. Using the Jetbrain tooling and some custom build scripts, this thing is a beast.
I also use Omnigraffle for diagrams/white boarding and Omnifocus for creating todo lists.
Windows 10 on the work-provided PC, but only because I didn't have a say in the matter. Would probably have picked Debian or Ubuntu otherwise.
