OSS/Self-Hosted alternatives for EcoBee smart-themostats/sensors?

I would like to purchase a smart-thermostat and wifi sensors; however, I would prefer if they don't have microphones/radar, and don't require connecting to the internet (LAN is fine).

What would you recommend?
