It thought most WiFi routers these days auto-adjusted their channel based on other nearby signals?
Theoretically that's true: the feature is there and the default is "Auto." Alas, channel autodetection turns out to be pretty bad, even on modern implementations like the TP-Link Archer series.

https://superuser.com/questions/1311149/why-do-wifi-routers-... has why. Basically, it's not dynamic enough. Sometimes that's because they didn't bother implementing channel changes at runtime, so it decides at boot and sticks with that for what could be months.
