There are certainly other factors in the obesity epidemic — endocrine disruptors, fake foods, PUFA, etc — but maybe the fortification of flour is a major factor?
I posted the other day about my friend’s tragic experience with Arizona’s involuntary mental health industry [0]. Tl/dr: My friend is diagnosed as chronically disabled. The doctors think she must take anti-psychotics for the rest of her life. I have videos proving she was actually fine 2 weeks before she ran out of alcohol. After maybe ~3 years of forced tranquilizers (“anti-psychotics”), she figured out for herself that she’s a poor methylator who can’t turn the provitamin folic acid into something usable. She said using a methylated form of Vitamin B-9 (L-Methyfolate) was like flipping a switch from “depressed” to “not-depressed”. (This has been forgotten. Now they just keep her on the tranquilizers without the vitamin.)
My retweet [1] said, “I've made an effort to avoid fortified flour for 11+ years, to avoid excess iron. Didn't appreciate how problematic fortification is until I ran across this thread.
