Good question. For my birthday, my SO took me to a fancy sushi place. It was my first time experiencing such a high quality food. I believe sushi is one of those foods where you can actually tell the difference based on the quality of ingredients used. Money well spent.
Sticky Rice as well. I love when I can use chopsticks to support a decent chunk of rice, instead of dry sand grains falling through my grasp
A great omakase is a truly memorable experience.
Either the Steak ladled in Butter + Thyme/Garlic, and Mashed Potatoes al Gratin that we had for Christmas dinner

or the small bowl of Greek Yogurt and Warm Honey I just had 15 minutes ago

It's not this year meal but the best meal ever was steak I had in 'Buenos Aires' restaurant in London. I don't live in London anymore but I dream to visit that restaurant once more :)
Spagetti bolognese with fried potatoes, together with a big mac. And a bottle of cheap whisky.
Bun bo hue literally on the side of a road in the Hue region in Vietnam. Haven't found anything in America like what you find in SE Asia where there's no menu, just one item and one price and that's all they serve 18 hrs a day nonstop.
My wife's oven baked panko crumbed eggplant.
