I went ahead and bought the 27-inch iMac while it was still around. You can still find some new ones. After Apple introduced the 27-inch Studio Display, which was basically the same price as an iMac but without the iMac- while retaining essentially the same panel, it seemed that Apple was suggesting that they won’t be replacing the 27-inch iMac with an M-model.
Interesting tidbit: compiling an Unity engine game on my iMac 27 Intel with 8GB RAM is quicker than compiling the same game on my M1 Max with 16GB RAM. By compiling, I mean once in Unity and then again in Xcode to run the project on my iOS device.
Last year's M1 Pro and M1 Max already give this. The Pro allows two external monitors in addition to the laptop screen. The Max allows four external, five total.

Yay the processor is faster on my m1 but it’s also more useless as an actual computer now.
