Native Spanish speaker from Argentina, just created an account to answer this. First, you should probably decide what regional variant to learn, and stick with it. There are subtle but noticeable differences in style, words and accent between, say, Mexican, Spanish and Argentine "Spanish". If you only want to practice reading, you could probably go for books of acknowledged writers (García Márquez, Vargas Llosa, Borges, etc). It depends very much on your preferences, you can search something related to your hobbies or your work. Hope this helps.
Honestly my impression as a Spanish speaker who mainly moves around the Argentina IT community is that there is barely any written content (except convos on Twitter); maybe it's because it's easier to write in English and aim for the whole world as your audience. It's also very heavily webdev/mobile focused.
I feel like the devs mostly hang out in Twitter and some Discords, and the content is mostly in Youtube or Twitch.
As someone else said I suggest goncy (that's his handle on Twitter), midudev and Brais Moure, those last two are Spanish and the first one is Argentinian, beware of the accents if you are just getting started.
