I have a handful of old phones I’d be happy to repurpose if there were an easy way to do it.
On Android there's Ubuntu Touch if you have a supported rooted phone. You still never get the full flexibility of a Linux (still Android running proprietary drivers under the hood), but it's nice to ssh in and do whatever.

Easier still is UserLAnd. Don't even need root. Works pretty well. http://www.davidgoffredo.com/phone-server

You mean the locked devices that you can't install Linux on?
