I would think because an AI could be a perfect liar and good at deception, basically a simulacrum of a human - mimicry that a predator like a vampire would need to blend in enough to be able to hunt.
Here I was thinking it is because they require the "lifeblood" of others (the writings, videos, etc. which are uploaded by so-called "content creators") in order to exist. I like your description, too.
They don't suck blood. They don't hide in the shadows. They could be immortal, but that makes them more like the Pyramids. They don't actually bring in knowledge from the past either - they get them from books, much like humanity.
You could argue that they're quietly manipulating us, but if they were, we wouldn't know. They might look and sound a little different, but so do the lizard men.
Technically: No, they are not vampires because the definition of a vampire and the definition of an AI are different. Ethically: No, they are not vampires because they may feed off of us, but it's isn't blood, it's information. The people they are learning from loose nothing by the exchange. We create them; we can destroy them. We can put in stop gaps and safety measures, or we can choose not to. Really, AI can't really be compared to ANY living thing, because a living thing has a will that we can't change or alter.
