How to train a chatbot on customer service data?

I’m an indie dev that’s been answering every customer email for 5 years on the same platform (Zendesk). I have this dream of training an LLM to replace me, or at least help train other support reps as my business grows? How would I start playing around with this using open source tools? What resources should I keep an eye on?
