Query Building UIs and Tech?

I'm tasked with building something of a query builder for outputting some sheet/grid data as reports (in the web browser). I have a few concerns:

1. General UX -- how do we make a query builder easy to use? Products seem to have various approaches -- sheets seems very limited, Airtable has a straightforward "where" builder and group-by menu, Monday.com has the same but leads with a "quick filters" option for non-power users I suppose. I presume there's likely whole classes of database querying UI products that I should be aware of but am not, any suggestions?

2. Sheet/table tech -- I'm not sure about building something from the ground up, probably a massive rabbit hole. Are there existing solutions people recommend?
