I don't know of many great rails codebases to study and learn from. But over the years I've learned a lot from the example code that 37signals has published (from Basecamp and Hey). I cleaned up all the code examples I've saved and put them into a repo, along with links to the original articles. Maybe this will help others who want to become better rails programmers.
