I mostly use Obsidian, but I do keep coming back to Zim for quickly jotting things down. It's fast and keyboard-oriented, but also includes most functionality under a WYSIWYG menu (unlike Obsidian). It's nice, if you like that fresh Free Software feel without the web technology crammed in.
Also worth mentioning is Rnote, more oriented towards handwriting and feels closer to OneNote: https://github.com/flxzt/rnote
Obsidian is pretty nice, and since all notes are saved as md file, saw some folks made terminal command line tool to add/edit/view/search obsidian md files, that is pretty cool and handy...

I personally despise Apple Notes - there's really no good reason for it to be as complicated and obfuscated as it is. Notetaking shouldn't require a database any more complicated than your filesystem. On Mac, I default to Obsidian (or even TextEdit).
