I did a deep dive on this recently. (Well, it's pretty shallow once you look.)

Huy Fong isn't the "original" Sriracha after all.

The sauce originates in the town of Si Racha, Thailand, where Huy Fong's founder was briefly a refugee on his way from Viet Nam to the US.

A good "original" Thai brand is Sriraja Panich. I was lucky to randomly pick up a few bottles at Grocery Outlet, before I learned all the dirt above!
