I had a Series 3 Apple watch, I also had atrial fibrillation. I upgraded to the Series 7 and it's recordings, though dismissed my doctors but supported by their choice of detectors enabled us to determine the probable cause.
I have hearing loss and the hearing aids I bought a few years ago cost me £4,000 / pair. I lost one. My insurance excess is less than a pair of Apple Pro 2 earphones. [1]
I'm not sure what else they could produce in the health sphere that would directly benefit me but so far what they are doing is great.
[1] One caveat: If you see me and realise I am wearing a hearing aid you will probably react in a different way to if you see me wearing Air Pods and assume I'm listening to music (which I think was a point made here a few days ago but which happened to me today at the pub).
