Those people don't get sick pay by default from their employer anyway. At least in Austria but I assume in Germany as well since you're not hired as a full time employee with full rights if you're doing uber eats/door-dash. They have to pay separately for that themselves for that.

And even if they do get paid sick leave, they tend not to take it for fear of getting fired for missing work.

It's legalized modern slave labor basically.
