Resources that teach AI through Projects?

I finished Replit's 100 Days of Code for python; this was the first time I programmed.

Now, I'm looking for resources that are 1) up to date (APIs, libraries) and 2) focus on building projects.

I don't have a specific domain with AI, but I want to focus on the fundamentals so I can better decide where to pivot to next (I find DL, GenAI, and AI agents the most interesting domains).

What are resources that teach AI similar to how Replit teaches python (project-based learning)?
