Wouldn't just having a job applicant show up for an in-person interview, like in the old days, solve all these problems?

They want to maintain a ‘high bar’ but are too ‘frugal’ to make the basic effort to bring someone onsite. All the while trying to pretend they still have a culture beyond squeezing as much work out of people as possible.
