I think, the 10% should be a pool for all projects with the license, otherwise if you have 5 open source projects, they could take 50% of your profit for example

Can it be used by a lawn mowing company? Greengrocer? Butcher shop?

I'm not sure that is compatible with the definition of open source. Someone can make a similar licence with 100% or 200% instead. Perhaps call it source available.
