Ask HN: Use AI for Proof of Concept?

I have an idea for a side project related to my job that I want to flesh out. It would involve having a low power display/terminal with an eink screen that connects to a backend that aggregates data from various enterprise systems and would accept requests from the terminals to send to other systems. I haven't coded in over 15 years and haven't dealt with hardware before and was thinking of going full AI to help get a POC going. Has anyone done anything similar, any recommendations for AI/language/framework and especially how to get the best out of the AI
