Should I replace the Nest 2nd gen thermostat screen with e-ink? (sett.homes)

I'm upcycling the Nest 2nd gen thermostat, which is being bricked by Google on October 25. One consideration was how much of the original thermostat to use; and if it made sense to replace certain old parts like the LCD with an e-ink screen.
