This seems like a privacy nightmare for workplaces...

it's also gemini under the hood, so big G is involved here too

It's going to be weird for relationships: "But you DID say..."

So Apple looked at Microsoft's "Recall" project and thought they could do that in an even creepier way?

Also, some states have laws around recording of conversations without every party's knowledge/consent. How will that be achieved?

Apple seems to be putting responsibility for appropriate use of this feature on the user, which will end badly.
