Poll HN: Incorporate in US, Canada or Netherlands?

I am working on a startup from South Africa and am considering a legal entity in either US, Canada or Netherlands. I plan to seek professional tax and legal advice but I wanted to know your thoughts, advice, particularly re: EUR as a billing currency vs USD.

Server costs are USD and EUR (OVH.ca, Hetzner.de). Billing would be SAAS, on a yearly or 6-monthly basis to amortize credit card transaction costs. My main concern is to avoid currency risk by billing in the same currency as the country of incorporation.

The majority of my market are in North America and Europe.

Where would you incorporate?

If you are currently based in the US, would you consider paying for SAAS in EUR?

The issue is much more complicated than the currency issue (because of taxes and a lot of other stuff), and you should be talking to lawyers rather than asking HN, I think.
Thanks, I will take your advice. I am concerned about double-tax issues, as well as ease of doing business. Have you incorporated before? Any things in particular to look out for and find out about?
UK is another possibility. Ltd's are pretty easy to set up up and deal with, they say.
