I remember reading about it in S&Box's (Source-2-based game engine) blog a while back - glad to see it released out to the public!
It's less about "can't do" and more about creativity :)

It falls under the category of "incremental games" that are generally simple but addicting due to the dopamine release from watching those numbers go up
I think in a lot of cases it's a means of monetizing an app where everything else is essentially free/full-featured without being behind a paywall
On the other hand, some companies really value design, or perhaps even find value out of good design :)
