macOS already has a dictation feature that does this exact thing, albeit in real time. I use it extensively. OP’s description in the linked article doesn’t say much more than this, so what am I missing with this…

Set your caption prefs globally at the account level in the web interface. It’s not a server or session level setting for some reason.

This might work for you, but doing this to an untrained, unexpecting, or visiting Apple user on your LAN will make their Apple device experience 1,000x worse.
