May I politely say "fuck you" for getting a 120k job after completing a bootcamp. Starting salary of 120k/yr for someone with a 3-month vocational program and an unrelated undergrad degree? That is literally insane.

Horrible description of UX designers as "...often judged solely on how the product looks". You're working with visual designers, not UX designers.
God, I feel the same way. I've spent most of my career at agencies and, yes, many of them are still using waterfall project planning.
They didn't set the proper client expectations, which is why their strategy engagement failed. Shouldn't they have figured out the client wanted them to just start designing stuff before they went away for a few weeks…
After working in agencies/consultancies, I realized I could cut out the middle man and let clients use me directly. So, yes, I freelance or consult because I found a need.
