It's very easy to go from what you're describing to a place hamstrung by nitpicking, though. The code review becomes more important than the code itself and appearances start mattering more than results.
Sometimes, over engineered approaches are necessary to make older software work with environment variables and configmaps, because said software is still designed for traditional VM deployments.
You'd also have to maintain the helm chart, which is arguably far more work. If you don't need the bitnami helm chart functionality, using more stock container images is easy and preferable.
