Without Google stating otherwise, my guess is that the ability to delete entries and disable web history only affects your experience but won't stop Google from collecting and keeping these data.
You should asking yourself why things got to that point. It's unlikely they will when clients feel they are getting value from your product/service and are being treated fairly.
Sounds coo but as a small business owner who uses online payroll I could care less whether this is "cloud based" - what will this do better than Intuit online?
