Most hoods in apartments (and many houses) are not vented to the outdoors. They just move the air inside around. You're not helping the air quality if all you do is move it around inside.
It's not just how much water can you boil and how fast, it's the excess heat and significant hit to indoor air quality, and CO2 concentration

The goal isn't to replace, it's to understand so you can grow past it. If you start from the fact that people haven't adopted it, maybe it's not as beautiful or enjoyable to most developers.
