I really like AI and find it very useful, but it's certainly a good idea to keep it on a short leash because if you don't it can run away and get lost.

The levels in most flour etc is in the parts per billion. The long term effects are already pretty well known. It is not an issue
No strong selective pressure could not make it happen "pretty quick" it's very complicated behavior that would take a very long time to appear
Actually we would be better consuming more soybeans. Most of it goes to animal feed.
